Restaurant Äpplet
Our restaurant Äpplet has been a bit of an unknown, but has always been appreciated by our guests that leave us very satisfied. Some have been here on a conference lunch, others while attending a concert or an office party. We are very flexible and can therefore cater to almost all your wishes. It is what makes us unique. We have throughout the years arranged large banquets such as the Student Ball in recent years for 1100 people. We have also arranged dinners in conjunction with conferences, office parties, kick-off dinners and live shows.
Äpplet has been Ecolabel Certified since 2008 which we are very proud of. Our fantastic staff works to a large extent with local and ecological produce. There’s no doubt that our guests leave our events with a huge smile.
Norrland Menu
STARTER
Dill baked char with pressed cauliflower, horseradish sour cream, apple and trout caviar salad with rye croutons.
MAIN DISH
Spice-fried reindeer roast beef, game terrine, pickled vegetables, almond potato cake with smoked Västerbotten cheese.
Served with chanterelles and lingonberry gravy.
DESSERT
Variety of cloudberry, almond cream, cream cheese mousse, almond cake and deep-fried almond.
Banquet menu
Starters
Roasted golden beetroot tartar
with elderberry vinaigrette, beetroot tapioca, mustard seeds, cold smoked sour cream and homemade crispbread.
Salted, slightly steamed haddock
with crispbread with chili, ginger and mangold salad, pumpkin puree and pickled shallot, chili and pumpkin.
Duck terrine
with roasted pecan nuts, apple puree, balsamic and port wine jelly with vein cress.
Main dishes
Soft baked deer roast beef
with potato and goat cheese cake. Served with herb maderia sauce and herb salad with pickled roots.
Grilled halibut
with beurre blanc as well as roasted peppers puree, chickpeas and potatoes with taste of caraway. Served with lukewarm mushrooms salad, frisée salad, oak leaves and salt-roasted beans.
Coffee rubbed flank steak
with parsley root and potato puree, sour pak choy, licorice sauce.
Desserts
Mousse
on blackcurrants with blackcurrant coulie, vanilla currants, almond and pistachio cake with almond cream.
Choklate mousse
with vanilla cream, boiled cherries, crispbread and sugar-baked bread.
White caprin brulé
blueberry gel, blueberry jam and Västerbotten cheese brioche.
Äpplet Restaurant uses locally produced and organic raw materials to a great extent but availability can be scarce in some seasons. This means that we reserve the right to replace a raw material with an equivalent if it is not available from our suppliers. For us, environmental protection comes first.
